Roast Chicken

Rub the chicken with the "Chicken Dry Rub."
Place in a roasting pan. Sear in a hot oven
(500° F.) for 15 minutes. Reduce the heat to 300° F. Cover.
Roast until tender. Baste frequently. Allow about 25 minutes per pound.

Chicken Dry Rub

2 Teaspoons Salt
1 Teaspoon Freshly Ground Black Pepper
2 Teaspoons Dried Thyme
2 Teaspoons Dried Rosemary
1 Teaspoon Dried Sage
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
1/2 Teaspoon Paprika

Mix together and rub on and under the skin of a chicken.

Poultry Stuffing with MicroGreens

2 Cups Soft Bread Cubes
1/2 Teaspoon Chopped Parsley
2 Tablespoons Melted Butter
Salt, Pepper, and Sage
Water or Broth
3 Tablespoons Finely Diced Celery
1 Teaspoon Chopped Onion
1/2 Cup MicroGreens, Finely Chopped
2 Teaspoons Poultry Seasoning

Combine all ingredients, adding sufficient water or broth to make the stuffing
pack easily. If the stuffing is too crumbly, a well-beaten egg may be added.

Corn-Meal Stuffing with MicroGreens

2 Cups Chicken Broth
2 Small Onions, Chopped
1 Tablespoon Poultry Seasoning
1 Egg, Well Beaten
3 Cups Soft Bread Cubes
1 Cup Corn-Meal
3/4 Cup Finely Diced Celery
1/2 Cup MicroGreens, Finely Chopped
Sage, Salt, and Pepper

Heat broth to boiling. Gradually add corn-meal, stirring constantly.
Cook for 10 minutes. Add bread, celery, onions, MicroGreens,
poultry seasoning, and egg. Season to taste.

Ham & Cheese Biscuits

2 Cups Flour
2 Teaspoons Baking-Powder
2/3 Cup Milk
1/4 Cup Minced Ham
1/4 Cup Cheddar Cheese
1/2 Cup MicroGreens, Finely Chopped
1/2 Teaspoon Salt
4 Tablespoons Shortening
1/2 Teaspoon Prepared Mustard
2 Tablespoons Melted Butter

Sift flour, measure, and sift with baking-powder, MicroGreens and salt.
Cut in the shortening and add milk gradually until soft dough is formed.
Turn onto lightly floured board. Knead lightly. Pat into a sheet, 2 inches thick.
Cut with a floured cutter. Lay half of the biscuits in a well-oiled pan,
brush with melted butter. Put 1/2 teaspoon ham which has been combined with
mustard on each; top with the rest of the rounds. Brush with milk, and bake
in a hot oven (450° F.) for about 12 minutes. Serve hot. An inch square of bacon
may be used instead of the ham in each biscuit. 12 servings.

Vegetable Soup with MicroGreens

1/2 Cup Shredded Cabbage
1/2 Cup Diced Carrots
1 Cup Diced Tomatoes
1/2 Cup Diced Potatoes
1/4 Cup Cooking Fat
1/2 Cup Diced Turnips
1/2 Cup Diced Onions
1 Cup MicroGreens
1/8 Teaspoon Celery Salt
5 Cups Boiling Water
Salt and Pepper

Brown carrots, turnips, onions, and tomatoes in hot cooking fat. Add water,
cabbage, celery salt, MicroGreens and potatoes. Season to taste. Cover.
Simmer until vegetables are tender. 8 servings

Strawberry Pineapple Punch

1/2 Cup Strawberry Juice
1 Cup Pineapple Juice
1/2 Cup Tea
Juice 3 Lemons
1 Cup Wheatgrass Juice
2 Cups Water

Combine all ingredients. Serve very cold. 6 servings.
